Rhubarb tarte tatin in a Morso Forno oven

500g rhubarb
200g sugar
25g butter
1 pack of puff pastry
1 vanilla pod
200g mascarpone cheese
1 lemon
a handful of mint


Warm the Morso Forno oven until it has almost reached the required grill temperature.
Peel the rhubarb and cut into thick pieces. Cut the vanilla pod in half lengthwise and scrape the seeds of one half onto the tip of the knife. Scrub the vanilla seeds on the rhubarb pieces.
Take a strong pan or a cake tin and pour most of the sugar into it. Place the tin and sugar into the oven to melt. Watch carefully to ensure that the sugar does not burn. If necessary, turn the tin 180 degrees so that the melting process takes place evenly. When the sugar has melted, take the tin out of the oven, add the rhubarb pieces slowly onto the sugar and place pieces of butter on top of the rhubarb. Finally, cover the tin with the pastry by pressing it carefully against the tin around the edges. Make holes in the pastry with a fork so that the steam can escape. Place the tin back into the oven and bake for 10-15 minutes, turning the tin if necessary so that baking is even.
Meanwhile, mix mascarpone, grated lemon zest, the rest of the vanilla seeds, and a little bit of sugar. You can dilute the mixture with a drop of cream.
When the pastry is golden, the cake is ready. Serve with mascarpone cream and sprinkle mint leaves on top. Enjoy!
